My initial thought was that she would not be able to take another form with a mortal body, however after some thought, it wouldn't be much different than a wizard from Harry Potter being an Animagus, so if you're set on that, that's cool. She would still be able to potentially die/get sick/etc. as a mortal, regular body or tree form version. watch out for fungus, I guess?
